Send potluck snack item ideas please!!!!

Once again book club is around the corner and I am struggling with what to take for our potluck nosh.  We have mostly finger foods and for some it is dinner.  Lately I've been buying my contribution from Trader Joe's - pizza, quiche, artichoke dip and sweet potato chips, etc.

I've noticed though that two people have settled into signature dishes and I'd like to do the same and get back to making my contribution.  One always brings homemade chocolate chip cookies and another puts together a hummus platter.  So I've been thinking of what I could make that would be easy to eat, relatively healthy and easy to vary by season.  So far all I've come up with is sliced tortilla roll-ups with varied fillings or bruschetta with varied toppings.

I know my readers have great ideas!  Please share - I really need some ideas.

  1. How about a hot artichoke or terrific spinach dip with healthy chips? There are some delicious chips on the market gluten free with lots of grains and flaxseeds. I look forward to seeing what your signature snack will be!! Happy Monday!

  2. Pam and I think alike. Hot (or cold) dip depending on the season. Pump it up and serve it in a bread bowl with either veggies or chips depending on your mood. This is what I bring almost all the time and it dissapears. you can bring it in a small slow cooker rather than bread bowl if you like.

  3. You already use my idea as I was thinking Bruschetta, but it is yummy enough to use as your signature dish and you could use a hot or a cold topping. This way although people may expect it you still have the option of some variety.

    1. Maureen, I just looked up recipes for bruschetta to get ideas beyond the traditional and there were ones using mango, one with asparagus, another with an artichoke spread, and one with a tuscan bean mixture. A possibility

Once upon a time I saw this "party sandwich" which was a loaf of Italian bread sliced in half lengthwise, opened up, about half of its fluffy bits removed and then run in a food processor to make soft crumbs. The crumbs were then used as an ingredient in a pate' type filler with pesto, cannellini, and black olives, all whirled together in the food processor with a little olive oil, then spread evenly over the bread. Roasted red peppers were laid in a layer on top of the pate', then starting on a long side, it was carefully and tightly rolled up, and wrapped in aluminum foil to keep it rolled up. After being refrigerated overnight, it kept its rolled-up shape, and then when it was sliced crosswise, you could see the lovely spiral of bread, red peppers, and tweedy green filling. The filling could be almost anything you like or maybe seasonal.
