What’s for Dinner & Other Plans - Jan 21-27

I plan for Tuesday through Monday. I have a fairly busy but not very social week and I want to work on finishing my office “glow up” project as well as other things.

What’s on the calendar? Dentist checkup, energy audit, Pilates, new internet provider hook up (Sonic vs Comcast now) plus Lunar New Year outing with DIL, her Mom and the grandgirls

This coming week’s dinner main dishes plan:

  • Beef stew from freezer
  • Turkey burgers x 2
  • Tilapia tostadas 
  • Veggies over mixed grains
  • Chicken chef salad
  • Huevos rancheros

What we ate for dinner last week: 

My favorites were the nachos and homemade chicken noodle soup as they were different from our usuals. We still have enough chicken frozen for another meal.

  • Instead of bean tostados - Nachos (tortilla chips, black beans, salsa, cheese, tomatoes, avocado) 
  • Shrimp sir fry (frozen cooked shrimp, red pepper, broccoli)
  • Chicken (store rotisserie chicken), sautéed zucchini & onions, and cornbread
  • Pasta (with chicken sausage, mushrooms, peppers and sauce) & Caesar salad 
  • Chicken noodle soup (homemade with fusilli, carrots, green beans, celery, onions) & cornbread x 2
  • Pork chop, sweet potato, zucchini

  1. We got into a tussle yesterday about cooking. Do you do all of the cooking at your house? I just feel like that is the worst job. To wake up knowing you have to figure out dinner AGAIN!! Ha!! At least I don't have to go out and catch it, clean it, and prepare it, right? But I really get tired of cooking.
    Homemade chicken noodle soup sounds good. I like the pork chop and sweet potato day, and PC would, too. We need to eat more fish but Paul just doesn't like it. Is your tilapia frozen in your tostadas?

    Hope the Luna NY event is so much fun. Take pics!!

    1. I restarted planning dinners because of the “pain” of knowing each morning that I had to come up with a plan. I joke that a criteria for marrying me was knowing how and being willing to cook! We do share the cooking by either taking turns or each doing part of dinner. Breakfast and lunches are on our own as we typically eat at slightly different times. We do buy frozen tilapia. We take shortcuts like microwaving the sweet potato.

  2. You have wonderful meals planned. Yep it takes the worry out of waking up and wondering what the heck you are going to cook for supper.
