Last week I didn't buy any additional protein at the store - just fresh fruit & veggies, bread, milk, eggs, etc. We ate well though.
Wednesday - chicken breast, spinach, sweet potato
Thursday - turkey burgers, tomato/cucumber/radish slices, mango
Friday - leftover cooked chicken breast, veggies
Saturday - I was gone; hubby ate frozen pizza
Sunday - leftover beef/barley soup, biscuits, oranges
Monday - pork chops, spinach, tomatoes, strawberries
Tuesday - leftover beef/barley soup, large salad
We only have one more night at home before heading out to our son's wedding. We'll have haddock with zucchini and whatever else needs eating up. Next week is mostly the wedding trip so no need to plan menus for the two nights we have between arriving home and grocery shopping.

ReplyDeleteThanks - we are looking forward to it and they are very excited which is lovely!
DeleteYour post made me smile - it's almost exactly what I do as we count down the days to a trip, and our last meal at home is often 'creative' as well.
ReplyDeleteHave a wonderful, wonderful time!
We will have a wonderful time I'm sure. It isn't eating up the food before we leave that is challenging - it is what to eat the first night home!
DeleteAh - my secret is to leave something in the freezer we can quickly heat and serve. This time it will be spinach & mushroom lasagna I made and froze in two person servings last month. :-)
