Menu Plan Monday - March 26th edition

A busy work week ahead with three evening commitments - two calls to clients in Asia and one speaking engagement.  The 3 weekend evenings are open though.  So this week needs a lot of easy to prepare or prepare in advance meals during the week and fun plans for the weekend.  Here's my plan.

Monday - After dinner call: Turkey burgers, squash & green beans
Tuesday - After dinner call:  Chili, salad, cornbread
Wednesday - Sauteed salmon, roasted asparagus, oranges
Thursday - Speaking night: Leftover barley chicken soup, cornbread, salad
Friday - Chicken pasta salad, oranges
Saturday - Date night
Sunday - Omelet with peppers & tomatoes, broccoli, toast

  1. You sound very busy. So smart of you to plan ahead. I have been trying to make this part of each week but so far, it's been hit or miss - mostly miss.

    You have inspired me to do a little planning for our dinners this week to make my life just a little less hectic.

    1. Adrienne, it does make the week less hectic although I really don't like doing it as I have just made decisions each morning for many years. What I am finding is that I am suggesting going out at the last minute less and buying less at the store and since I want to minimize stockpiling that is a good thing.

  3. Great menu plan with lots of ideas. My turkey burgers are always so dry.. I'm looking forward to trying some of your ideas!
