Last week certainly had more interesting dinners due to my menu plan. We didn't go out to eat at all which was part of the plan with vacation coming up next week. I had to bump one dinner to this week as the chickpea curry made enough for another whole dinner.
No late afternoon or evening meetings this week. So what is planned for this short week before we head off to have fun?
Monday - Vegetarian chili, cornbread and green salad
Tuesday - Halibut with sun dried tomatoes & Parmesan sauce, pasta, and veggies
Wednesday - Chicken tostados, fruit salad
Thursday - Teryaki Salmon, rice, green salad
Friday - Leftover chili, et al
Saturday - Maple-Mustard Glazed Chicken, rice, veggie

I made a big pot of chili yesterday morning...all vegetarian this time. Two new things I did...I soaked dry red beans overnight instead of using canned AND I added cinnamon on a whim. Turned out pretty good. No other meals are "planned" but I have the idea of going really, really simple over the next few weeks in order to lose some weight before you know what.
ReplyDeleteThat sounds really good - cinnamon is a nice addition. I bought some chipotle chile powder and used it in addition to regular chile powder and it gave a nice smoky flavor.
